Savory Garlic Butter Mussels with Chardonnay and Cream Recipe

Mussels absorb the rich flavors of garlic, butter, and cream with the freshness of Chardonnay and combine for a dish that is both delicious and elegant. Whether you’re cooking for a weeknight dinner or entertaining guests, these mussels deliver a satisfying taste experience with minimal effort--except for cleaning the mussels; that part is hard.


This recipe with heavy cream is more of a French version. We had mussels like these in Paris on Montmartre, behind Sacré-Cœur Basilica. That experience inspired us to acquire very cool stainless steel mussel pots.


In Barcelona, mussels were also served in cool pots, but without the cream and with a bit of tomato in the broth.

Ingredients You Will Need


  • 2 tablespoons olive oil

  • 2 tablespoons minced shallot

  • 1 tablespoon minced garlic

  • 4 tablespoons butter

  • 1.5 pounds fresh mussels cleaned and debearded

  • 1 cup of Chardonnay or other dry white wine like Pinot Grigio

  • ½ cup heavy cream

  • 2 pinches kosher salt

  • ⅓ cup chopped fresh parsley

  • 1 -2 Baguettes sliced


These ingredients create a sauce that is rich, creamy, and aromatic, perfectly complementing the natural brininess of the mussels.


People dip their bread in this sauce and can't get enough. It's that good.


Preparing the Mussels


Start by cleaning your mussels thoroughly. I scrub them, pull the "beards" off, and scrape off anything unappealing. I probably overdo it on the cleaning.


Discard any that are cracked or remain open when tapped. Rinse them under cold water to remove any grit or debris. This step ensures your dish is clean and fresh-tasting.


Cooking Instructions


  1. Heat a medium-high heat pan and add the olive oil. If you have a mussel pot or two, great. If not, any pot with a lid will work.

  2. Stir in the garlic and shallot and cook briefly until fragrant, about 60 seconds.

  3. Add the cleaned mussels to the pan and stir to coat them in the garlic mixture.

  4. Add the butter and stir to coat the mussels.

  5. Pour in the Chardonnay, heavy cream, and chopped parsley. (I often pre-combine these items before heating the pot(s) so that I can add it all at once for convenience.

  6. Season with two pinches of kosher salt.

  7. Stir gently to combine all ingredients.

  8. Cover the pan and reduce the heat to low for a gentle simmer.

10. Let the mussels cook for 8 minutes and no more than 10 minutes, stirring once at the 4 to 5-minute mark to ensure even cooking and sauce distribution.


The mussels will open up as they cook, releasing their juices into the sauce.

  • Use fresh, live mussels for the best flavor and texture.

  • Don’t overcook the mussels; they should open fully but remain tender.

  • Chardonnay adds a subtle fruitiness and acidity that balances the richness of the butter and cream. If you don’t have Chardonnay, a dry white wine will work well.

  • Fresh parsley adds a bright, herbal note that lifts the dish. Add it just before serving to keep its color and flavor vibrant.

  • Serve this dish with crusty bread to soak up the delicious sauce or over a bed of pasta for a heartier meal.


Serving Suggestions


This garlic butter mussels recipe pairs beautifully with slices of baguette lightly sprinkled with olive oil, toasted, and sprinkled with fresh parsley.
